Everything South City Eats and Cooks with Chef Ava Marie is gearing up for summer at San Mateo County Fair with a Tilapia Ceviche recipe on a hot summer day and with hopes for 2022 Culinary Arts Competitions return.
Days from now we will be gathering together at The San Mateo County Fair and rest assured, COVID precautions will be in place! It was disappointing it was canceled last year and I look forward to reuniting with the entire community, from all over the county. I have missed so many people who I’ve met through all the years from school, contesting journey, my job at via services, and neighborhood. I’ll be attending, not 2, but 6 amazing concerts at the fair! I will be attending 3 of 5 of Latin concerts on the last day.
On an opening day, I will be attending the Young Mc and Coolio concert.

Also, I will attend a promotional day on Wednesday, June 9th for Journey Tribute Band. So, if you see me at the Fair, come say hi and take a selfie with me!
Speaking of San Mateo County Fair, I am sad to say to those who want to know, or who wanted to enter, that the Culinary Arts have been postponed until 2022. That is ok. As long as y’all get vaccinated we’ll have it. It will be bigger than ever and can’t wait to compete again!
So, Now the Tilapia Ceviche Recipe
Here is a ceviche recipe to cool you off on a hot summer day and please enjoy this recipe.

Tilapia Ceviche
1 lb tilapia filets, cubed
4 Limes juiced
1 lemon juiced
A Sprinkle of Bolner’s Fiesta Products lime pepper and pico de Limon (you can go purchase from them or Amazon has it)
Place in a bowl and mix to coat and refrigerate overnight
The next day add
2 chopped Roma tomatoes remove seeds
1 avocado pitted and cubed
1 onion chopped
½ jalapeño seeded and diced
1 cucumber chopped
Mix all together on top of tilapia and mix to coat and serve with lime pepper Tortilla chips (recipe below)
Lime pepper Tortilla chips
Non-stick cooking spray
3 flour Tortillas cut into wedges
Bolner Fiesta spices lime pepper
Preheat oven to 400ºF. Line 2 cookie sheets with parchment and set aside. Arrange Tortilla wedges onto the baking sheets and mist with cooking spray and sprinkle with lime pepper and bake for 8 minutes or until golden brown and crisp.
