Jason Isberg’s BBQ Ribs

South San Francisco, Ca  June 16, 2021

In response to our GAME ON Contest, Jason Isberg shared his grilling technique with us – and his shortcut tip is the best!

Our GAME ON question was – Grilling or Barbecuing, Rub or Marinade.

Previously Brandon Vargas submitted his technique and recipe, to which Jason acknowledge how good they looked. {more HERE}

“I BBQ mine essentially the same way (with a similar rub). One extra thing I do is a dry brine of the ribs with kosher salt a few hours prior to cooking them.” Jason tells us.  “This helps them come off the grill moist and tender. I also use Kinder’s BBQ sauce except I prefer the hot over the mild.”

“One more tip for ya…If you don’t happen to have the time to spend minding the grill for the few hours it takes to fully cook the ribs then here is a shortcut that I use.”

What? A shortcut to grilling ribs? Bring it on Jason!

Jason continues, “During the work week I may not have time to fully BBQ ribs for dinner, I’m already hungry when I get home and want GOOD ribs. So, here is what can be done ahead of time to save time on a weeknight. You can pre-cook the ribs in the oven and just finish on the grill.”

Can you imagine enjoying grilled ribs after work?

“First, rinse and fully dry the ribs. Then season with coarse kosher salt, black pepper, garlic powder and lightly brush with olive oil. Tightly wrap the seasoned ribs in aluminum foil and cook in the oven at 350° for about an hour and a half. Set aside until ready to grill.”

Has anyone else tried this method?

“Finally, ready your coals and apply your preferred rub to the ribs. Heat them on the BBQ grill (unwrapped) for 10-15 minutes, adding your BBQ sauce during the last 2-3 minutes. Voila, you get the smoke flavor from the grill but save a bit of time as you’re not minding a hot grill for a couple hours. Works well. Enjoy!”
