Summer is Here and the Grill is HOT!

“I made these tender coffee brown sugar lovin oven ribs which can be made in a Traeger smoker or @KamandoGrill” Chef Ava tells us.

“So, before roasting I baste the ribs with @koopsmustard dijon mustard (an former @worldfoodchampionships sponsor from 2018). And then I add my coffee spice rub on both sides before placing in a foil lined baking sheet and roast low n slow for 3 hours at 300*.

At halfway through cooking, cover with foil and place back to the oven.  At the last 30 minutes baste with @SweetBabyRaysBBQSauce. You then return them to oven to cook through.

Then allow to rest 15 minutes before cutting into slabs.  And enjoy how tender off the bone. Mmm it’s so good!”

Brown Sugar Coffee Low n Slow BBQ Ribs Recipe
1 racks beef ribs, cut into pieces to fit pan
1/2 cup Koops dijon mustard
1/2 cup sweet baby rays bbq sauce
For the rub
2 tbl fine coffee grounds
2 tbl kosher salt
1 tbl brown sugar
1 tsp ground cumin
2 tsp chili powder
1 tsp pepper

Preheat oven to 300
Method mix all the rub ingredients together and set aside

Cut the slab of ribs in half, trim excess fat, and brush with dijon mustard on both sides and sprinkle rub on both sides of the meat. Place rib side down on the baking pan. Bake for 3 hours halfway through cooking cover with tinfoil to avoid drying out.
At the last 30 minutes baste with BBQ sauce and recover and cook through and allow to rest 15 minutes before cutting into slabs and serving.

Makes 8 YUMMY servings
